Summer Squash Slaw

Ingredients –

2 medium zephyr summer squash Foodfeasible

1 medium zucchini

1 tbsp cilantro

1 tbsp sesame seeds

1 cup of broccoli

Plenty of Ginger Dressing (3 tbsp canola oil, 1/4 cup grated fresh ginger, 3 tbsp lemon juice, 1/2 tsp grated garlic, 2 tbsp chopped scallions, 2 tbsp toasted sesame seeds)

 

Process-

  1. Julienne squash and chop broccoli – combine in a large bowl with shredded cilantro
  2. Whisk together Asian vinaigrette ingredients
  3. Drizzle and toss to combine
  4. Serve (goes well with pork, chicken, fish, try on a sandwich or to top a salad)
